How Macaroni is made.

Macaroni is an English version for the Italian word “maccherone” which in turn is taken from the Greek word makaria which means in English food from barley. We know it now as pasta, and it has been used in Italian cooking for some time; however, it is now popular in many other countries.

My favoured macaroni dish is, Macaroni and Cheese which dates back to the 17th Century, but it is still one of the best know macaroni dishes today.

Preparing Macaroni Dough.

Macaroni is prepared from a hard, clean, glutinous grain that is produced from a hard, semi-translucent wheat that is very rich in nitrogenous elements and can only grown successfully in hot climates, The grain is ground into a meal called semolina and then the bran is removed. A mixture of two thirds semolina to one third hot water is then made into very tasty dough which is thoroughly kneaded and rolled by machinery in shallow vats.

Making Macaroni

When completely mixed the dough is forced through the perforated head of an extruder partially baked. It is extracted in whatever shape the head was designed to produce when the dough is extracted from the holes. The extruded dough is then dried by laying it on top of frames covered by clothes.

How Macaroni got it's name

The shape of the extruder determines the name of the finished product. If the extruder had narrow strands we get vermicelli and spaghetti, then we have the butterfly-shape of farfalle followed by the tubular-shapes of cannelloni, macaroni and penne and then the twisted shape of fusilli, and lastly the shell-shaped conchiglie and lumache. If the finished dough which is now called pasta is cut into fancy patterns, it is called pasta d'Italia. Italian pasta also includes flat sheets that are known as lasagne, tagliatelle and fettucine.

How to keep Macaroni fresh

Like all cereal foods, macaroni should be kept in a perfectly dry container. If the Macaroni gets dusty wipe it with a clean dry cloth but you should never wash the macaroni before cooking it.

Macaroni should be cooked in a large saucepan of boiling salted water or milk but it is probably best to use a mixture of both. Macaroni can also be cooked using tomato juice, soup stock, or any other liquid, it can be added to soup and other dishes to give them some body.

Cooking Macaroni.

Macaroni absorbs a lot of water; so make sure have plenty of boiling water to cook the macaroni in. The length of time required may vary from 8 minutes, if fresh, to 30 minutes if stale, ether way macaroni should be cooked until it is tender. After cooking the macaroni, pour it into a colander and let it drain, then to prevent the tubes from sticking together pour some cold water through the macaroni.

If the storing conditions are good the top grade macaroni which is rough, elastic, and hard can be kept in good condition for years. During cooking good macaroni swells to nearly double its size, by absorbing the boiling water but retains its shape. Whereas the poor quality macaroni which is smooth, soft and breaks easily may become mouldy, contains a lot of starch, and very little gluten.

When cooked the macaroni has a white appearance, and tends to split.
